300 g self raising flour
250 ml milk
40 g butter (melted)
125 g caster sugar
3 medium eggs
1 tsp mixed spice
1 pinch salt
100 g mixed sultanas, currants & raisins
40 g glace cherries (chopped)
Place all ingredients into a large mixing bowl and whisk up together until dropping consistency
Heat a pan or griddle on a gentle heat
Take one tablespoon of mixture and place onto heated pan/griddle
Turn over as soon as bubbles start to appear in the rising pancake
Makes about 30 small pancakes
