- 125g plain flour
- 55g butter (cold and cubed)
- 1 pinch of salt
- 25 to 35g water
- Place flour, butter and salt in a food processor
- Blend quickly until it's a fine crumb
- Slowly add drops of water until pastry comes together into a lump
- Wrap pastry in cling film and put in fridge for 15-20 minute before using
- If you do not have, or do not want to use, a food processor, bring the flour, butter and salt into a fine crumb by rubbing together.
